    Letsitiin: Letsitiin ehk fosfatidüülkoliin -lecithinum, lüh PC- on koondnimetus fosfatiidide rühma kuuluvate koliini sisaldavate lipiidühendite kohta, mida esineb rakumembraanide välispinnal ja mida saadakse mitmetest taimsetest ja loomsetest toiduainetest, letsitiinipreparaatidest ja mida toodab ka organism ise. Fosfatidüülkoliin reguleerib lipiide liikumist organismis. Sõna „letsitiin“ on pärit Kreeka keelest 'lekithos' tähendades munakollast. Letsitiin avastati esmakordselt 1850. aastal Prantsuse teadlase Maurice Gobley poolt, kes eraldas selle munakollasest. Aastaid kasutatigi letsitiini allikana munakollast. Eelmise sajandi kolmekümnendate keskel leiti letsitiini sojaubades. Letsitiin sarnaneb oma ehituselt rasvadega ning kujutab endast olulist rakumembraanide koostisosa. Ta aitab moodustada terviklikku rakumembraani ja kergendab vedelike liikumist rakusiseselt ja –väliselt. Letsitiin on tähtis närvirakkude toitaine, mistõttu ta soodustab mälu- ja kontsentreerumisprotsesse. Lisaks aitab letsitiin hoida vere normaalset kolesteroolitaset, parandab naha üldseisundit ja pidurdab isegi juuste väljalangemist. Letsitiin on samuti peakomponent ajukelmes, varustab lihaseid ja närvikudesid hapnikuga. Letsitiin aitab hoida maksa tervena, ennetades rasvade ladestumist maksas ja ta osaleb ka detoksikatsiooniprotsessis, taastades ühtlasi maksa funktsioone. Letsitiin on suureks abiks ateroskeloosi ennetamisel. Ta aitab ka ennetada sapikivide moodustumist. Toiduainetööstuses kasutatakse letsitiini antioksüdandi ja emulgaatorina lastetoitudes, saiakestes, salatikastmetes, majoneesides, margariinis, jäätises, šokolaadis ja maiustustes.
